i was able to get the uber menu setup. BUT
How do I totally disable the megamenu on mobile and just use the stadard xtheme mobile menu?

Regretfully this is not possible since when using ubermenu, the native X menu is being replaced entirely by uber menu.
You need to enable mobile button of ubermenu. Kindly refer to the link below.
