If I can’t get the MEC Plugin to update after I’ve done the pro theme update, how do I get it updated? I’m afraid if I delete it and reinstall I’ll loose all my events and setup.

Thanks for posting in! Be advised that the latest available stable and supported MEC version is 7.31.0 in our Themeco plugin repository.
You may not be able to update to the latest 7.32 version because it is still not available in our plugin repository. Our dev team are still doing testing for conflict and incompatibility with out theme.

The issue isn’t that I can’t update to the latest one but that it fails update at all.

Before updating the MEC plugin, back up your database and files. Then deactivate MEC, delete it, and reinstall via X/Pro > Extensions > Modern Events Calendar.

Will all my events and setup come back? Or will I have to set it all up again? I have active events I don’t want to mess with.

All MEC settings are saved in the database. When you deactivate the plugin, all those settings remain in the database. As long as you do not delete that data, all of those settings will be intact once you have reinstalled the plugin.
