Hi,
I have found that the xtheme menu is very limited in the design and i have look at ubermenu but that also doesn’t offer what i want to achieve.

any suggestions on how i can create a menu similar to this: https://www.anglianhome.co.uk/

Looks like you are looking for a mega menu. The link you have shared to a large extent can be replicated using Uber menu. Yes, you might require some custom development work to fully replicate.
