we have updated to the latest pro version and had nothing but problems with fonts, colors, etc.

Please double check your colors. On the other hand, I noticed that you have inserted a custom JS code:
This is not correct and it may lead to a conflict or issues in the future. Please use a 3rd party plugin like “Insert Headers and Footers” plugin where you can easily manage to insert any custom code in the header or footer of the website.

nothing was changed on these after the theme was updated - it just broke

Can you please update your Pro theme to version 6.0.5 first? There was a known color issue in the previous version and seems to have been fixed in the latest release. After the updates, clear all your caches and test the site again.
