If I disable all plugins and change to the default 2020 theme the data boxes show up. If I leave all plugins off and change back to the Pro theme the date selection disappears.

It looks like you have a custom CSS that is hiding that on the page. You most probably placed the custom CSS in Theme Options > CSS or anywhere in the builder CSS interface that’s why you only get the issue when Pro is active.
Please remove the custom CSS shown the following screenshot.
