No matter what I do, I can’t make links of pages or blog posts appear on social media with the correct thumbnail (page featured image). It always default chooses my logo and blows it up. Links look terrible.

Please try to go to X > Theme Options > Social then enable the Open Graph option.
Another alternative way is to use the Yoast SEO plugin then you can set the image that will be used when the post is shared.
