Hi,

How can I stop using a demo as a basis to build my site on so I can go back to building from scratch?

Hey,

You can use this plugin https://wordpress.org/plugins/wordpress-reset/ to reset your installation, so, you`ll lose all the content and database data and will start it from scratch.
