Is it possible to rollback a theme version? If so, what is the process?

In your account dashboard you should see two downloads one of them being the previous. Uninstalling Pro / X and then re-uploading in the themes area of wordpress. Apologies for the inconvenience.
Ok thanks. I also have the Pro Child Theme. So do I just delete the Pro folder and then reinstall? Do I need to do anything with the Child theme?
The child theme can be left alone. Visit /wp-admin/themes.php on your domain and you should be able to upload the pro theme. If not yes delete the folder and replace it with the old pro theme.
