How to I select a specific number for a Stack?

I would like to use Integrity 9, as showcased on your demo pages. How do I select that, or any stack number? I cannot find an option in this menu:

From Wordpress dashboard, please navigate to X > Overview > Demo Content > then select Integrity 9 > after that click on the Setup Demo Content button:
