Hello,
I noticed on the Church demo theme that the sermons page only shows posts under the category ‘sermons’ and likewise with events and news.
How is this achieved?

That’s the WordPress Category page which is readily available out of the box. You just need to create Categories and view the category page. You can learn more here https://www.wpbeginner.com/beginners-guide/how-to-add-categories-and-subcategories-to-wordpress/
