I have a page with the categories displaying using visual composer product category widget. Under columns I entered 5 as 4 is not enough, it works ok with 4 entered but entering 5 takes it down to 1 column?

Unfortunately, 4 is the max you can show.
Alternatively, you could create a grid of Products using The Grid addon and set to 5 items per row.
