Church theme does not have a blog page to display all posts. And if using Wordpress Menu (add category), does not give me enough freedom to eidt the archive page. Therefore I created a single page to display all my posts. But there is a restriction on post count (max 4). How do disable that to show all posts?

Regretfully, the Classic Recent Post element’s maximum post count is only 4. You will need to add more of that element and use its Offset option to show more posts.
That would be tedious though so alternatively, you can try using one of the bundled grid plugins. Both have the features you need. Please visit the links below for more details and plugin usage instructions.
If using a post grid plugin isn’t an option, I’d recommend you wait for the next update as it will include a Layout Builder for building custom single and archive pages. It will have the new Post Grid element to show a list of posts that is native to our theme and builders.
