How can I create a new blog or “news” page? It was brought to my attention that I can’t edit the original CTA image on the right hand side from the gym theme that I’m currently using. Thanks!

Thanks for asking. 
As of today you can’t edit the blog index page using Cornerstone page builder. However, you can change the widgets from Appearance > Widgets.
If you would like to have a different News page then the same can be done by creating a new page and assigning the same as the default post page under Settings > Reading > Your homepage displays.
