Hi I am trying build header and watching YT videos, the visuals don’t match so I cannot find anything? Example: where s the sticky header settings?

According to your screenshot, you’re currently inspecting the Container. The Sticky settings is in the Bar. Click the Bar in the element navigation.
Once you’re in the Bar settings, check the Sticky option.
After that, if you want to change the Sticky settings, scroll down through the Bar settings and set the Sticky options you need.
