I want to adjust the width of the content area and sidebar area of any given page using that template, but as a non-expert I don’t even know where to start.

You can adjust those under X>Launch>Options>Layout&Design>Site Width
By adjusting the site width, the sidebar width automatically adjusts accordingly.
