I am building footers for my theme and wondered a few things. How do you center menu items?
If I build custom footers, can I use more than one? How do I keep the themes widgets and add a bottom footer?

Do you mean how to center the Inline Navigation menu to its container?
If so, edit the container settings and set its flex option to Filllspace then set the Horizontal alignment to center.
Yes, you can have several footers on the site using the footer builder and you can assign different footers to the pages.
The sidebar widgets will remain as is even of you ceate footers. In case you want to add widgets to the footer, you can use the Widget Area element:

You only need to create one custom footer. In the custom footer, you can add two or more bars. The bars can have container/s which would serve as your columns. The first bar will have 3 containers which will be for the “About Us”, “Contact Us”, and “Sitemap”. The second bar will have 3 containers as well which will display the copyright, sign up text and the icons.
If this does not help, please provide us access so we can check your footer and maybe we can create an example for you to get you started with.

To center, a widget or element on a Container set the Flex Layout Horizontal of that container to Center.
To center align a text or headline element, please set its text align option to center.
