How would you go about this? Use ACF Pro? Or is there an easier option?

Thanks for writing in! The theme does not have any default elements that you can do of what you have in mind. It is only possible with custom coding which is beyond the scope of our support already. We only cover getting your site setup, bug fixes, and minor cosmetic changes. You may need to contact a 3rd-party developer to do the coding for you.
In the meantime, please check out the Essential Grid or The Grid plugin which you might be able to use to display a grid of persons and have a sort filter option. You can install any of these plugins by going to Pro > Validation > Extensions. Check out the documentation here:
