Excerpt Length – is there a function to be "first line" instead?

Hi there, and thank you in advance for your help.
Is there a function I can put in Theme Functions that will pull the First Line rather than a number of words into the Category Archive (thumbnails)? I currently have the excerpt length set to 2. This is a portfolio site and it’s important that the full title is seen in the category archive. as a work around I have used dashes and a css class which hides the dashes by making their color white. Unfortunately the css does not apply to the except text.
My client is having a problem with the dashes showing up on the category page.

I have successfully removed the “more (…)” with your help by adding a bit of code to theme functions.

There is no function that will pull the First Line rather than a number of words. You can make use of the manual excerpts instead. Excerpts are optional hand-crafted summaries of your content that can be used in your theme. Learn more about manual excerpts.

I understand excerpts quite a bit better now. But the easiest solution to customizing excerpts was found in this note:

Note: As of WordPress version 3.1, some screen options on the Post & Page edit Administration Panels are hidden by default. The Excerpt field is hidden by default if it has not been used before.

So for anyone else who is stuck on this just click Excerpts back on in screen options. Then it’s possible to customize the excerpt for each post.
