Hello support team,
I would like to create an even grid that displays both the media and content like in this website:
The bottom portion of the grid does not show up in the “even” & “cobbles” layout so I have to use “masonry” to show the bottom content.
Is there any way to get the bottom portion of the grid to show in the “even” grid setting?

No, unfortunately, that is not possible unless you have a great deal of customization for the Essential Grid. That is outside of our support scope but you may find a paid freelance developer to do such customization for you in the X Users Facebook Group.
