i am nut sure if this is related to the last updates, since I do not edit headers that often.
I am able to go in the header editiing mode, and select the header i want to modify.
Strange is now that the header is not showing anymore, so you don’t see live changes.
What can be done

I checked and it seems to be working fine on my end.
Can you provide us the name of the specific Header you are trying to edit and a screenshot on how it looks in your end.
For the mean time try to clear your plugin cache and browser cache then check again.
