is it possible to edit the theme outside of Wordpress? if so how? I’ve tried to open the files in VSCode and I get nothing.

Yes, it’s possible. You need to download the files first that you want to edit using FTP. Then open and edit the file in your editor. When you’re done upload it back to your server.
