When I try to edit text in a “headline elemet” directly in the editor (in pro) by double tapping the text, it converts it back to std. paragraph style and the option to directly edit the styles are removed (only controls for bold, italic etc. are visible). It appears to be a bug.

What you experienced is normal. It’s not a bug. The Headline element does not have full Rich Text Inline Editing options because you should not use block level tags in that element as it already is a block level element.
Don’t use the Rich Text options crossed out in the screenshot below as the markup or code they produce should not be added in the Headline Element. Use the element options instead. If you wonder why those options are still there when they should be used, the reason for that is there’s currently no way to remove them.
