Since Portfolio items are so similar to Posts it seems like there should be a duplcate function. Is there one?
I’d rather just keep using the same settings and chanigng one field instead of setting up each one from scratch.

We certainly appreciate the feedback! This is something we can add to our list of feature requests. This way it can be taken into consideration for future development. All of these items are discussed with our team internally and prioritized based on the amount of interest a particular feature might receive.
For the time being, please try this plugin: https://wordpress.org/plugins/duplicate-post/. Just enable it on portfolio post type and you are good to go.
Also, if you are using Cornerstone, other option is to just same the portfolio as template and then just insert it to the new portfolio item.
