i am looking for the Meta key for “category” to display it in a single-layout as a headline, but cannot find it 
Trying a lot, but found nothing…

Hello Christian,
Thanks for writing to us.
You need to go to your single layout and you can insert the Headline element or Text element where you can add the {{ term.name }}. In case you want to display the archive tile which is a category meta. Please have a look at the screenshot below.
For this term meta {{ term.meta({"key":"archive-title"}) }}
