I would like to desactivate the review of the mine woocommerce ? ( maintaing the reviews in the wordpress ) How could be possible to achieve it thanks

You can turn off the Reviews under X/Pro > Theme Options > WooCommerce > SINGLE PRODUCT > REVIEWS TAB > switch to OFF:
