Hello, not sure if that is the correct terminology, but I would like to create a calendar/table that highlights the different class times available at our gym — with the option to view all and specific classes.

Unfortunately, making this type of table need custom HTML and CSS. There is no such element in the theme to make a similar table easily.
I would suggest you please check this Plugin which may help you with this.
However, this is not official recommendation due to fact that there is no account of issues. You can search for other too.

That is technically possible. However, that would fall beyond the scope of our support since it would require custom development. You need to contact a 3rd party developer to help you with this.
