I would like to change some of the text boxes so that they only show the first few lines of the text and will be clickable if someone wants to read more.

Thanks for writing in! Regretfully there isn’t any available featured in the theme that can do like in the example URL. What you can do is to utilize the Contact Area Modal element while using only text as the toggle and the rest of the text contents to display in the modal element content.
I would like to give you an example using the Content Area modal element.
1.) Insert a Content Area modal element.
2.) Disable the Graphic setup in the Toggle setting
3.) Enable the Text setup
4.) Insert the full text in the modal content area.
