Previously I used a basic free wordpress theme (Truly Minimal) and created around 400 articles with it. With Theme X all my content is still available without any modification.
When I go to cornerstone the content of these articles does not show.
My question is : if I create my new articles with cornerstone and at some point in the future change from Theme X to some other theme, all this cornerstore-built content will not be available anymore ?

That is correct. Although the page contents will still be there, the page will display text and shortcodes that are autogenerated by Cornerstone when you were adding elements and contents on the page. So if you have built a page using Cornerstone, you will have to have Cornerstone active on the site and use it to maintain the page contents.
