I am having an issue with ConvertPlus communicating with Mailchimp, I see that some other users have also had issues. I have tried everything I can think of to solve the problem (reinstalled, plugin conflict, all plugins are updated). Any solutions that your team knows of?

It seems to be working okay, you have a double optin setup in which the user needs to confirm their subscription before they can be added to your listing. This is to prevent spam by adding machine generated emails.
So yes, users should confirm it through their email first.
