I am developing a site using a church theme however I am thinking of changing it to an agency-(like other expanded theme) instead. Can you confirm that all the page contents from the current theme won’t disappear when I move to other new theme?

All the pages will be intact unless you have the pages with the same name as the original theme. If you do not have such same name pages and you changed the pages name you will have no problem.
Having said that, changing the demo content in the middle of the website development is not a good idea as all the settings of the theme will be changed. And it is important that you have a complete back up of your website before doing the change to make sure that you will be satisfied with the outcome.
