While I love the look of Ethos1 that I am using, I have concluded that it is too restrictive for what I need. Therefore, I will change to Integrity. Do I need to reinstall X theme and start over or can I just switch to Integrity in the Customizer and be able to start over from there?

If you change to the Integrity stack, I recommend you to import the demo content again.
As the demo content of Ethos stack doesn’t match with the style of Integrity stack.

Thanks. Do I just go to X > Validation, then change Demo Content to what I want and press Setup Demo Content? When I do this, I get a message that says ‘Installing demo content will not alter any of your pages or posts, but it will overwrite your Customizer settings’. However, I want to start with pages like the ones in one of the Integrity (or Renew) demos.

That should be fine. When you import the demo, you will get the homepage for the Renew as well but the homepage created for the previous demo will be untouched and can be found on the page’s area that you may delete.
