When my site is on desktop, all of the colors are great and the menu is how i want. As soon as it gets smaller, the menu style changes and adds the little 3 line bar. But all of the hover colors and menu colors are the default. I just want to change the colors to match the rest of the site.

Thank you for writing in, it looks your site is base on the Lawyer demo, if so, that tan color on mobile menu is applied via custom CSS, to change that please navigate to Theme Options > CSS and find this block of code.
.x-btn-navbar.collapsed {
color: #b9965c;
}
You can either change this color value #b9965c or remove that block so it will have its default color gray.
