Thanks for reaching out.
Have you tried contacting Wordpress.com (your hosting)? It appears it has problem with internal cache and it restore it back. The dates are server related, and changes are saved by Wordpress itself, the builder just forward the data that is needed to save and call the save function provided by WordPress.
Does this happen every time or on some cases only? Are we able to reproduce this once we check your site or is it days to happen?

Thanks for the reply. I have since run a few tests, and I think something odd is happening within my office environment. The plugin ‘Jetpack’ does not connect when I am at work, but works perfectly fine when I work from home. I have also just tested the site on my mobile and the changes I made yesterday did not appear when I was connected to the work WiFi, but when I switched that off and connected via 4G, the changes DID appear… and the site was quicker!
I strongly suspect it is an internal issue now, but do you have any idea on what I could do here to sort it? I will raise it with our IT man, but he may not know where to look. Thanks,

Unfortunately, I’m not sure how your internal system works so I couldn’t provide further recommendation. Except that you should always clear your device’s browser cache for every test you’ll do.
