What is the best way to change the order of posts and portfolios? Is changing the dates the best/only way? Thx!

I went with post types order, I like it! Wondering though if there is an option to list all or more posts per page on the wordpress back end, I have over 100 posts, would be great to see them all on on backend page. Possible?
