I’ve tried uploading a variety of .jpg files but keep getting an “http error” message.
I’ve tried switching from Pro to X theme and the problem persisted. I’ve also tried disabling all plugins and the problem persisted.

I checked and your added configuration isn’t taking effect, I tried it as well. Plus, your current configuration is wrong based on Debug Info plugin. Example,
It should be 520m (as 520 MB) and not 520My.
I recommend contacting your hosting provider to alter this configuration. Been trying and it won’t change, it doesn’t even logs the error so maybe it’s due to cache too.

In which file did you find the line “post_max_size 520My”?
php.ini now shows:
upload_max_filesize = 500M
max_execution_time = 300
memory_limit = 1G
post_max_size = 750M
max_input_time = 600
max_input_vars = 9000

I used the “String locator” plug-in. The line with the bug was located in wp-admin/php.ini Removing the “y” sorted the problem.
How it got there I don’t know!
