In the process of switching a website from Pro/X to another theme.
Since a handful of pages are made with Pro/Cornerstone, I don’t want them to malfunction for the meantime.
How do I install Cornerstone as a plugin so those pages will stay fine even with another theme?

Unfortunately, that is not possible. The Pro theme has the Page Builder embedded into itself and you can not use it separately if you decide to use another theme.
You will need to change the content of your page and recreate them with another page builder or whatever builder that the theme you want to use recommends.
