My blog looks currently like this. It are the episodes of an itunes podcast which are imported by a plugin. So far so good.
But I want my blog layout like the following example:

Where can I change my layout. I’m a little bit confused because of the theme x and the pro builder.

Blog Layout can be change on Pro > Launch > Theme Options > Blog. Your site is currently using Masonry style . You may choose to use standard If you want to have a sidebar like the sample site, set Layout to Use Global Content Layout. Then on Theme Options > Layout and Design > Under Content Layout: Choose Content with Sidebar.
Standard style will give you the same one column layout. Achieving exactly same style though needs customization. Sample default layout with the same stack renew is like this: http://demo.theme.co/renew-1/blog/. On the left sidebar of Theme Options, there’s a list of Icons, click CSS to open Global CSS editor where we can add custom CSS for the site.
