Hello, I would like for my background image size to be the full size of the image and for my text laid on top of it to be centered in the middle. Is this possible?

To achieve what you have in mind, please do the following:
1.) Please set a minimum height in your column settings according to the aspect of your image. For example, your image is 325x490 dimension, you must set the minimum height of 490 in the column settings.
2.) Still in the column settings, please enable the Flexbox option and text-align to center:
3.) And then set the horizontal and vertical alignment to the center:
The final result should be like this:
