I have looked for information on how to create a new page template so that I can use it to make it easier to choose the correct header

Thanks for reaching out.
If you are using the Pro, you can use the Header and Footer Builder to create Header and Footer and assign it to the Pages. But if you are using the X, you may need to create the custom Page Template for that. I would suggest you go through the following articles on how to create the page template.
If you are not proficient in this, I would suggest you hire a developer who can assist you to do the customization or you can avail of our newly launched service called One, where we answer the questions beyond normal theme support.
