Is there a simple way to make a site accessible to people with eyesight problems? I mean some
menu or header buttons to enable/disable high contrast (like described here) and plus/minus buttons to increase or decrease font size.

There’s no one step button that will achieve this. The styles will depend on the stack you will choose. See samples here: https://theme.co/x/demos/. Regarding colors, you are free to choose what suits you best and also the font size. By default it is responsive depending on the screen size but there’s no button or function available that will increase/decrease font size or enable/disable contrast. I found this plugin that might help: https://wordpress.org/plugins/wp-accessibility/. Just note that any issue with third plugin features and functionalities should be directed to plugin developer.
