Is there anyway of getting it to display as W x D x H ?

Thanks for clarifying. Upon further research it is quite a customization. It would be best to contact woocommerce developer or a custom developer to rearrange the default dimension. We would love to help you however it is beyond the scope of our support.
I have found the source to edit but not sure it would help or would not cause any problem.

I swapped the get_length and get_width in the function and it worked as I wanted.
