Hi! I need a header that is clear with a large white logo and menu text, that shrinks on scroll and becomes solid white with a different logo and black menu text… like this….. http://www.kriesi.at/themes/enfold-restaurant-one-page/

Is it possible to do in x theme?

It is possible however you need to customize your header using custom CSS or javascript. We would like to help you with that however it is beyond the scope of our support. We can only share similar thread that you can follow to achieve the achieve it.
