I would like to create pages like these two below and need your help with the customisations required.

(2) http://www.themerrymakersisters.com/easy-healthy-recipes/
PS The bottom section of page (2) is actually an excerpt of page (1). So if you can tell me the customisations I need to create page (1) I will be able to also create page (2).

This page http://www.themerrymakersisters.com/blog/ is a normal blog page. Select blog page under Settings -> Reading. Next navigate to Customize -> Blog, enable masonry layout and set columns to three.
In regards with the other page, you can add ‘recent posts’ element at the end of each post page to display latest posts from specific category.
In regards with ‘load more’ ajax button, regretfully this isn’t a feature offered by X. It could be possible with custom development, but this would be outside the scope of support we can offer. You may wish to consult a developer to assist you with this. X is quite extensible with child themes, so there are plenty of possibilities.
