I want to set the default to the above structure, allowing me to override individual Tags Using the Archive Title, and Archive Subtitle if required.

I tried using the Archive Subtitle, but I loose the Tag name in doing so.

I have a child theme setup and would appreciate guidance as to where I can reset these labels, there must surely be a central table that is used for languages other than English.

I would also like to change the word BLOG to Survey, in the menu bar found here

Thanks for writing in! If you add individual tag archive titles and subtitles in Posts > Tags, all of the default Tag name will be replaced with your tag archive titles. If you want to change the landmark titles particularly the tag archives, please do the following:

1] Using Notepad or TextEdit or Sublime Text or any text editor, please create a new file in your local machine.
2] Insert the following code into that new file

3] Save the file named as _landmark-header.php
4] Upload this file to your server in the child theme’s folder
wp-content/themes/x-child/framework/views/integrity/

If you want to change the Blog to Survey, please edit the Blog page in Pages > All Pages and change the title to “Survey”.
