I’m using the Renew stack and really like the portfolio in the way it lists the items, but I don’t love how it displays the individual items on the sub pages. The gallery you are looking for is not available in the theme.
You have to use any third-party plugins or custom code to do this.
I would like you to check ESS Grid plugin which come with theme for free. It gas similar feature make gallery like this.

Is there any way to keep the portfolio main page the same and then link to custom pages? I can design each portfolio item as a custom page and will have more freedom to link to the the pages from there? Does that make sense?

The feature you are looking for need custom development, which is out of our theme support scope.
You can create similar portfolio grid using CSS grid plugins and can link it to individual pages.
Using theme portfolio post option you can’t link to a custom page.
