I’ve searched and can only find old posts that are no longer relevant. This post has a good suggestion for the problem, but the menu item no longer exists.
It suggests going to Settings > Cornerstone > Allowed Post Types, but Cornerstone is no longer there. With all the nooks and crannies that menu items have to hide, can you please direct me where I can enable products to be modified in Cornerstone?

Are you using an updated version of Pro?
If so please check the Permissions and make sure Products are enabled from the Permissions manager.

Excellent, that worked well…too bad the menus are so fragmented. I think this would be the single biggest way to improve beginner usability. Thanks for your help.
