how can I change the font and settings for the x-demo menu. I would like to know what options I have to select the best way to show the dropdown menu. I currently using the renew 2 stack

All the possible options for the header are available by going to X > Theme Options > Headers. The X theme has limited options regarding the header and the rest should be customized by yourself via CSS.
The Pro theme has a separate builder called Header Builder which you can use to create headers with detailed level of control. For more information:
