I am having difficulty re-sizing the default product grid size using X Theme.

The theme is not responsible for that product display. It’s the Essential Addons third party plugin that is displaying that.
It would be best that you contact the plugin developer to see if there’s a way to specifically resize the image on the plugin’s end.
Alternatively, you can try using the bundled grid plugins to display your products in a page as they allow you to choose image sizes. Please see the items below:
