Greetings. I inherited a site that has not been updated for a while.Is there anything I should know or do to be successful? should I just replace the X folder or go through the update process? Thanks,

You will have to manually update the theme and Cornerstone. I suggest you to please take a look at following tutorial and scroll down to manual update section:
