Our site is currently experiencing a number of different random issues since I upgraded WooCommerce to the latest version. The site is on WordPress 4.8, X is at 5.1.0 and the Cornerstone plugin is at 2.0.5.
Are there any issues with everything being on the latest version?

There is no report to us regarding any conflict with the woocommerce.
Please share us your URL so we could check your setup closer.
Check below if the version of your woo is the same below:
If not please reupdate your woocommerce according to the plugin version compatible with X latest version.
